accidental mushroom stroganoff

We call this our “accidental stroganoff” because we were making a pie filling in the air fryer and looked at the bowl of delicious creamy mushrooms and thought, “This would make an amazing stroganoff”!

225g/8oz button mushrooms

1 large onion

1 tbsp smoked paprika

340g/12oz/1½ cups cream cheese

120ml/4fl oz/½ cup vegetable stock

1 tsp garlic purée

1 tsp dried parsley

Salt and black pepper

Cooked pasta, to serve

01 Chop the mushrooms in half and peel the onion and slice it lengthways. Load into the air fryer, sprinkle with 1 teaspoon of the paprika, and season with salt and pepper.

02 Air fry at 180°C/360°F for 8 minutes, then transfer the mushrooms and onions to a silicone pan.

03 Add the cream cheese, remaining paprika, veggie stock, garlic purée and parsley to the silicone pan. Season generously with salt and pepper, stir well and place the pan back into the air fryer basket. Air fry at the same temperature for 6 minutes, or until you have a piping hot creamy sauce, then serve over pasta.
